Pasteurization Methods

Almond pasteurization can be achieved in many ways without altering the nutrient profile while guarding against harmful bacteria. SunnyGem has several pasteurization methods available in-house: PPO, blanching, dry roasting and steam.

SunnyGem’s pasteurization equipment has been certified by the Almond Board of California and the USDA and is reliable in providing delicious tasting almonds that are safe for human consumption. Our processes are guaranteed to provide a 5-log kill for salmonella. Installed in 2014, the dry roaster and steam lines are the latest in technology.
